Place everything except noodles into large pot. Add 8 cups of water and simmer for 1 ½ hours. In a skillet, brown 1 lb of Italian sausage. Break it into small pieces. Saute 2 diced carrots, 2 stalks of chopped celery, and 1/2 cup chopped onion with with sausage. Add sausage, vegetables, and 1 (28oz) can of diced tomatoes to pot. Combine 6 cups of water and seasoning packet. Bring to a boil and simmer on low heat for an hour. Bake Taquitos in oven per directions. Place cooked and cut taquitos in soup bowls and add broth.
